Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 cup white sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1/2 teaspoon vanilla extract
- 1 cup mashed bananas
Instructions
- Preheat oven to 400°F (205°C). Grease muffin cups or line with muffin liners.
- In a large bowl, mix together flour, oats, sugar, baking powder, baking soda, and salt.
- In another bowl, beat together egg, milk, oil, and vanilla. Stir in mashed bananas.
- Combine banana mixture with flour mixture until just moistened. Spoon batter into prepared muffin cups.
- Bake in preheated oven for 18 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
