Instructions

  • Preheat oven to 400°F (200°C). Grease muffin cups or line with muffin liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix together orange juice, orange zest, buttermilk, oil, egg, and vanilla.
  • Stir the wet ingredients into the dry until just moistened. Fold in cranberries.
  • Spoon batter into prepared muffin cups. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
