- 1 orange, zest and juice
- 3/4 cup buttermilk
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1.5 cups fresh cranberries
Instructions
- Preheat oven to 400°F (200°C). Grease muffin cups or line with muffin liners.
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix together orange juice, orange zest, buttermilk, oil, egg, and vanilla.
- Stir the wet ingredients into the dry until just moistened. Fold in cranberries.
- Spoon batter into prepared muffin cups. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
