Dubai Chocolate Bar Recipe – Oh My Homemade!

Ingredients

  • 400 g of dark chocolate (but also can use milk or white)
  • 30g of unsalted butter
  • 150g of kataifi pastry
  • 250 g pistachio cream

Instructions

  1. Making Chocolate: To begin, melt the chocolate in a bowl that is safe to use in microwaves. At 30-second intervals, heat it and stir between every interval until the mixture becomes smooth.
  2. Covering Molds: Spread some melted chocolate in your chocolate bar molds so that it completely coats the inside. Invert them over parchment paper so that extra drips can fall off. Pour scraped extra back into this bowl for later use! Finally pack everything inside and put into a freezer.
  3. Prepare the Filling: Chop the kataifi pastry slightly. In a medium-sized pot, melt some butter on the stovetop and add the pastry into it. Stir until its color turns deep brown then take it from flame or heat source. Use this item and mix with already cooked kataifi after melting it in microwave.
  4. Combine The Bars: Pistachio mixture should be placed in molds that were previously coated with melted chocolate. The molds should then be returned to the refrigerator for 10 minutes. Thereafter, cover the filling with more melted chocolate and smooth it over uniformly using an offset spatula. Place back inside freezer where it should remain like this until set completely for around thirty minutes or so.
  5. Finish and Store: When completely frozen, remove the bars made from chocolaty goodness out of their containers. Keep them refrigerated because they are not tempered otherwise they would melt easily!

Notes

  • Tempering Chocolate: Tempering chocolate ensures a glossy finish and firm texture at room temperature. However, if you skip tempering, like in this recipe, keep your chocolate bars refrigerated to maintain their shape.
  • Choosing the Right Chocolate: Choose dark chocolate if you want to create a taste that will be able to bring out the flavor-richness of the pistachio cream; but you can also use milk or white chocolate to make it sweeter than expected.
  • Sourcing Kataifi Pastry: It might be difficult to find kataifi dough; however, it is important for making that unique crispy texture. You can find it at Middle Eastern grocery stores or specialty shops within town.
