For the chicken:

  • 2 chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil

For the pasta:

  • 12 oz pasta
  • 1 tablespoon salt

For the sauce:

  • 2 tablespoons butter
  • 6 cloves garlic, minced
  • ⅓ cup dry white wine
  • ½ cup broth, low sodium
  • 1½ cups heavy cream
  • 1¼ cups grated parmesan cheese
  • 3 tablespoons finely chopped parsley
  • ½ teaspoon black pepper
  • Extra parmesan for garnish

Instructions

  1. Prepare the chicken: Lay each chicken breast flat on a chopping board and pat them dry. Cover with parchment paper and use a meat mallet to flatten to an even thickness. Season with salt and pepper.
  2. Cook the pasta: Bring a large pan of water to a boil, add salt, and cook pasta for 1 minute less than the packet instructions. Reserve 1½ cups of the pasta cooking liquid and drain the pasta.
  3. Cook the chicken: Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 2 minutes on each side. Transfer to a plate and cover.
  4. Make the sauce: Reduce heat to low, melt butter in the same skillet, add minced garlic, and cook for 30 seconds. Pour in wine, bring to a simmer, and cook for 2 minutes. Add broth and simmer for 2 minutes more. Add cream, sprinkle parmesan, and stir until melted. Let the sauce simmer for 1½ minutes to thicken.
  5. Combine pasta and sauce: Chop cooked chicken into thin slices. Add drained pasta to the sauce along with ½ cup of the reserved cooking water. Stir gently until coated. Add chicken and cook for 1 minute. Add more pasta water if needed to adjust the sauce consistency.
  6. Garnish and serve: Add most of the parsley and black pepper. Serve immediately, garnished with remaining parsley and extra parmesan.

Notes

  • Don’t overcook the chicken; it needs about 2 minutes on each side.
  • Turn the heat to low before adding garlic to avoid burning it.
  • Reserve extra pasta cooking water to adjust the sauce if it thickens too much.
