  • 1 teaspoon salt
  • 4 teaspoons ground cinnamon
  • 1 cup chopped walnuts

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (if needed)

Instructions

  1. In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes, then stir in raisins.
  2. Preheat oven to 350°F (175°C). Grease and flour two 10 inch cake pans.
  3. In a large bowl, beat eggs until light. Gradually beat in the white sugar, oil, and vanilla. Stir in the pineapple. Combine the flour, baking soda, salt, and cinnamon, stir into the wet mixture until absorbed. Finally, stir in the carrot mixture and the walnuts. Pour evenly into the prepared pans.
  4. Bake for 45 to 50 minutes in the preheated oven, until cake tests done with a toothpick. Cool for 10 minutes before removing from pan. When completely cooled, frost with cream cheese frosting.

  6. Beat the Cream Cheese and ButterIn a large bowl, beat the cream cheese and butter together until smooth and creamy.
  7. Add the Sugar and Vanilla: Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the vanilla extract. If the frosting is too thick, add 1-2 tablespoons of milk to achieve the desired consistency.
  8. Level the CakesIf the cakes have domed tops, use a serrated knife to level them.
  9. Frost the Cake Place one cake layer on a serving plate. Spread a generous amount of cream cheese frosting over the top. Place the second cake layer on top and frost the top and sides of the cake.

Notes

Use Fresh Carrots: Freshly grated carrots provide the best texture and moisture for the cake.

Don’t Overmix: Overmixing the batter can make the cake dense. Mix until the ingredients are just combined.
