Cake:
- 1 (15.25 oz) package lemon cake mix
- 1 ⅓ cups vegetable oil
- ¾ cup orange juice
- 4 large eggs
- 1 (3 oz) package lime-flavored Jell-O mix
Frosting:
- 1 (8 oz) package cream cheese, softened
- ½ cup butter
- 4 cups confectioners’ sugar
- 3 tablespoons fresh lime juice
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease three 8-inch round cake pans.
- Prepare the Cake Batter: In a large bowl, beat together the lemon cake mix, oil, orange juice, eggs, and lime-flavored Jell-O until smooth and well combined.
- Bake the Cake: Pour the batter evenly into the prepared cake pans. Bake for 16-18 minutes or until a toothpick inserted into the center comes out clean. Allow the cake layers to cool completely.
- Make the Frosting: In a large bowl, beat the softened cream cheese and butter until light and fluffy. Gradually add confectioners’ sugar and lime juice, mixing until smooth.
- Assemble the Cake: Once the cake layers have cooled, frost between each layer and then frost the top and sides of the cake.
Notes
- Use Fresh Limes: For the best flavor, use freshly squeezed key lime juice for the frosting. It’s a little more effort but totally worth it!
- Adjust Frosting Sweetness: If you like a more balanced sweet-tart flavor, you can add an extra tablespoon of lime juice to the frosting or reduce the amount of confectioners’ sugar slightly.
- Layering Tip: For a firmer frosting that’s easier to work with, consider adding a bit of meringue powder or increasing the confectioners’ sugar for more stability.
