Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix flour, rolled oats, salt, baking soda, and baking powder.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the eggs one at a100 time, then stir in the vanilla and mashed bananas.
- Gradually blend in the oat-flour mixture; stir just to combine.
- Pour batter into a greased 9×5 inch loaf pan.
- Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean.
Notes
Banana Ripeness: The riper the banana, the sweeter and more flavorful your bread will be.
Oat Texture: For a finer texture, pulse the oats in a food processor a few times before adding them to the mix.
Baking Evenly: If your bread is browning too quickly, tent it with aluminum foil to prevent burning while it finishes baking.
