Ingredients Needed For Protein Cookies

  • 1 cup of oat flour (use blender for an instant recipe!)
  • 1/2 cup of vanilla protein powder ( any flavor you prefer)
  • 1/4 cup of a sweetener blend (check for your supermarkets favorite, but the one I use is based on Stevia and erythritol )
  • 1/4 cup of almond milk
  • 1/4 cup of melted unsalted butter (coconut oil works great too)
  • 1 tsp of vanilla extract (because a touch of magic can take us further!)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/4 cup of whatever makes your heart beat (chips, fruits or nuts! ANYTHING goes in this magic!)

Instructions

  1. MIX: Heat up the oven for 350°F (175°C). In a bowl, grab your oat flour, protein powder, sweetener, baking powder and salt. Give it a good mix until well combined and even.
  2. ADD: in other bowl whisk melted coconut oil, almond milk and vanilla, blend very good and slowly put with dry mix!

  1. Cookies taste great. Alot of how they taste will depend on brand of protein powder. I couldn’t find how much protein was in the protein powder you used? I noticed it’s 14g per cookie but depends on how many grams that particular protein powder is.

    • SO HAPPY you enjoyed the cookies! 🍪 You’re totally right the flavor can depend on the protein powder brand. The one I used has 25g of protein per serving (30g of powder), which gave me that 14g of protein per cookie.

      If your powder’s different, it might tweak the protein count a bit, but TRUST ME, they’ll still be YUMMY! Let me know which brand you used I’d love to hear how they turned out! 🙌

  3. Sorry to pile on with another egg question, but regular cookies have eggs…why no eggs?!?!? Eggs are IMHO THE PERFECT food! The have vitamins, amino acids AND protein that other foods don’t. I’m always looking for protein snacks that INCLUDE EGGS 🥰
