  • 2 eggs
  • ⅔ cup unsalted peanut butter
  • ½ cup granulated sugar (white, coconut, or brown sugar)
  • 1 teaspoon vanilla extract
  • ½ cup vanilla protein powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (omit if using salted peanut butter)
  • ½ cup chocolate chips

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla until smooth.
  3. Fold in the protein powder, baking soda, and salt. The dough will be thick.
  4. Stir in the chocolate chips.
  5. Using a 2-tablespoon scoop, form dough balls and flatten them slightly. They won’t spread much during baking.
  6. Bake for 8-12 minutes (10 minutes works well for most ovens). They will firm up as they cool.
  7. Let the cookies cool on the baking sheet for 20 minutes before serving.

  • To freeze, let them cool completely, then freeze for up to 1 month. Reheat directly from the freezer at 300°F until warmed through.
