Ingredients
Scale
- 1 pound lean ground beef or mild/hot sausage
- 16 ounces processed cheese such as Velveeta
- 10 ounces Rotel Tomatoes (undrained)
- Β½ teaspoon chili powder (optional)
Instructions
- Cook the Meat: In a large skillet, cook the ground beef or sausage over medium-high heat until no pink remains. Drain any excess fat.
- Combine Ingredients: Reduce the heat to medium. Add the processed cheese, Rotel tomatoes (with the juices), and chili powder to the skillet.
- Melt and Mix: Stir the mixture continuously until the cheese has melted and the dip is smooth.
- Serve: Keep the dip warm and serve with tortilla chips.
Notes
- For a Lighter Option: Use lean ground turkey instead of beef.
- Cream Cheese Variation: Replace the Velveeta with 8 ounces of cream cheese and add 1 cup of shredded cheddar for a different flavor profile.
- Consistency: If the dip becomes too thick as it cools, thin it out with a splash of milk.
- Reheat: If the dip cools and becomes firm, reheat it on the stovetop or in the microwave until itβs dippable again.
