Brookie Recipe

OMG, I just made Brookies—half brownie, half cookie, and 100% delicious!  These decadent bars are the ultimate combo of two classic desserts, and they are super easy to whip up! Whether you’re a brownie fan or cookie lover, these Brookies are guaranteed to be a hit!  Warm them up with a scoop of vanilla ice cream, and you’ll be in dessert heaven!

For the Brownie Batter:

  • ½ cup (113g) unsalted butter, melted
  • ¾ cup semisweet chocolate chips or chopped chocolate
  • ½ cup (100g) granulated sugar
  • ½ cup (100g) light brown sugar, packed
  • ⅓ cup (35g) cocoa powder
  • 1 tsp vanilla extract (5ml)
  • ½ tsp salt
  • 2 large eggs
  • ½ cup (65g) all-purpose flour

For the Cookie Dough:

  • ½ cup (113g) unsalted butter, room temperature
  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) light brown sugar, packed
  • 1 tsp vanilla extract
  • 1 large egg
  • ½ tsp salt
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 ⅓ cups (160g) all-purpose flour
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a 9×13 baking dish with parchment paper.
  2. Prepare Brownie Batter:
    • Melt the butter and mix in cocoa powder.
    • Add granulated and brown sugar, salt, and whisk in the eggs and vanilla.
    • Stir in flour until combined, then fold in chocolate chips.
    • Spread the brownie batter into the prepared pan and set aside.
  3. Prepare Cookie Dough:
    • Cream butter and sugars until light and fluffy, about 3-4 minutes.
    • Mix in vanilla, egg, salt, baking powder, and baking soda.
    • Gradually add flour, then fold in chocolate chips.
    • Drop spoonfuls of cookie dough over the brownie batter.
  4. Bake:
    • Cover the dish with foil and bake for 20 minutes.
    • Remove foil and bake uncovered for another 20 minutes until golden.
    • Allow to cool completely before slicing.

Notes

  • For a fudgier texture, melt chocolate chips and mix them into the brownie batter.
  • Be sure to cream the butter and sugars well to achieve a fluffy cookie dough.
  • Let the Brookies cool completely to avoid messy slices.
