- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/2 cup chopped parsley
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese (optional)
Instructions
- Rinse the quinoa thoroughly under cold water.
- In a medium saucepan, combine quinoa and water. Bring to a boil, then cover, reduce heat, and simmer for 15 minutes or until the water is absorbed.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and allow to cool slightly.
- In a large bowl, combine cooled quinoa, cucumber, bell pepper, red onion, cilantro, and parsley.
- In a small bowl, whisk together olive oil, lime juice, red wine vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine. If using, sprinkle with feta cheese before serving.
