- 2 cups seeded and cubed watermelon
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh mint leaves
- 1/4 cup chopped fresh basil leaves
- 1/4 cup chopped fresh cilantro
- 1/2 cup extra-virgin olive oil
- 3 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons lime juice
Instructions
- In a large bowl, combine the watermelon, feta cheese, mint, basil, and cilantro.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, black pepper, and lime juice.
- Drizzle the dressing over the watermelon mixture and gently toss to combine.
- Serve immediately, or refrigerate until ready to serve.
