Ingredients

  • 1 cup finely ground vanilla wafers
  • 2 tablespoons melted butter
  • 3 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 3 eggs
  • 2 tablespoons coffee-flavored liqueur
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons coffee-flavored liqueur
  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix ground vanilla wafers with melted butter. Press onto the bottom of the prepared pan.
  3. In a large bowl, mix cream cheese, sugar, and vanilla until smooth. Blend in sour cream. Mix in eggs one at a time. Stir in 2 tablespoons coffee-flavored liqueur.
  4. Pour half of the batter over the crust. Pour remaining batter into the pan.
  5. Bake in preheated oven for 45 to 50 minutes, until center is set. Allow to cool, then refrigerate for 4 hours.
  6. In a medium bowl, beat heavy cream with powdered sugar until stiff peaks form. Fold in 2 tablespoons coffee-flavored liqueur. Spread over cheesecake. Sprinkle with cocoa powder before serving.
