- 1 cup finely ground vanilla wafers
- 2 tablespoons melted butter
- 3 (8 ounce) packages cream cheese, softened
- 1 cup white sugar
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 3 eggs
- 2 tablespoons coffee-flavored liqueur
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 2 tablespoons coffee-flavored liqueur
- 2 tablespoons unsweetened cocoa powder
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, mix ground vanilla wafers with melted butter. Press onto the bottom of the prepared pan.
- In a large bowl, mix cream cheese, sugar, and vanilla until smooth. Blend in sour cream. Mix in eggs one at a time. Stir in 2 tablespoons coffee-flavored liqueur.
- Pour half of the batter over the crust. Pour remaining batter into the pan.
- Bake in preheated oven for 45 to 50 minutes, until center is set. Allow to cool, then refrigerate for 4 hours.
- In a medium bowl, beat heavy cream with powdered sugar until stiff peaks form. Fold in 2 tablespoons coffee-flavored liqueur. Spread over cheesecake. Sprinkle with cocoa powder before serving.
